The blanching steps :

  1. To cut the meat into thick chunks about 2 cm to 3 cm in sizes.
  2. To cook them in boiling water about 1 minute
  3. To drain and rinse in water.

It can prevent the nutrient loss, and removing the odor, blood and grease. The soup will clear.
