It must  to deep fried twice. The purpose of first time is cooking the ingredients ( the oil temperature about 150º~160º C ) , the purpose of second time is fried more crisp with high heat( the oil temperature about 180º~190º C ). But you must wait about 30 second to fry the second time after the first frying. Because the residual moisture of ingredients will go to the face after the first frying, until the face becomes soft and then it adjust high heat for fried, the water will evaporate and forced extra oil, so that it can more crisp and reduce grease taste.
