Ingredients
- Mackerel Fillet 300g
- Potato 350g
- Bacon(chopped) 1 rasher
- Shallot(chopped) 2Ts
- Parsley(chooped) 2ts
- Mixed Herbs 1/2 ts
- Salt 3/4 ts
- White Pepper Powder 1/4 ts
- Flour 2 Ts
- Egg(beat) 1 pc
- Golden Breadcrumbs 1 cup
Method
Step 1
Steam mackerel fillet, discard bones and flake meat. Cooking potato in the skin, then peel and mash.
Step 2
Mackerel, potato, bacon, shallot, parsley, mixed herbs, salt, white pepper powder, flour and 1/2 egg mix well. To divide into 8 portions. Roll each portion into cylindrical shape, coat with egg and breadcrumbs.
Step 3
Heat half wok of oil to 160 C, deep fry fish croquettes in medium hot oil until golden in color. Drain and serve.
