Frittata with Potato and Prosciutto

Ingredients
- Olive oil 4 tbsp
- Potato(peeled,chopped) 7 oz
- Onion(chopped) 1/2 pc
- Garlic(minced) 2
- Cloves(minced) 2
- Salt some
- Ground Black Pepper some
- Egg(large) 6 pc
- Heavy Cream 1/4 cup
- Parmesan(grated) 1/4 cup
- Prosciutto(chopped) 2 oz
- Basil Leaves(fresh, chopped) 2 tbsp
Method
Step 1
Heating the oil in a non- stick frying pan over medium heat. Add the potato, onion and garlic. Season the potato mixture with salt and pepper, to taste. Saute over medium-low heat until potato is golden colour and crisp on the outside,tender inside, about 7~10 minutes.
Step 2
Whisk the eggs, cream, parmesan, prosciutto and basil in a medium bowl to blend. Stir the egg mixture into the potato mixture in the skillet. Cook over medium-low heat until the egg mixture is almost set but the top is still loose about 3 minutes.
Step 3
Turn the frittata over. Fry until both side in golden brown colour. Serve.
