What is potato starch ?
Fine in texture, white in colour. Do not mix up with tapioca starch which is greyer in colour and looser in texture.
To coat the food in dry potato starch before deep frying. It works especially well in dishes with crispy-crusted food and is dresses in sauce. It works better than flour in this case.
Its congealing property is not as good as cornstarch. Sauces thickened with potato starch tend to become watery after a while.
