Assorted Vegetables in Portuguese Style

The cook method is Portuguese style.

Ingredients

  • Cauliflower(cut in small cubes) 400g
  • Red carrots(sliced) 250g
  • Eggplants(cut in cubes) 250g
  • French Beans(cut) 150g
  • Turmeric 1 tbsps
  • Shallot(minced) 2 ebsps
  • Garlic (minced) 1 tsp
  • Chicken Broth 400 ml
  • Coconut Milk 100 ml
  • Salt 1/3 tsp
  • Sugar 2 tsp
  • Cornstarch(mix in water)3 tbsps
  • Oil 2 tbsp
  • BLANCH VEGETABLE
  • Sugar 2 tbsps
  • Salt 2 tbsps

Method

Step 1

Rinse and cut the vegetables.

Step 2

Boil 1.5L the water and add in 2 tbsps of sugar and salt. Blanch vegetables until cooked. Dish and drain well.

Step 3

Heat the oil in wok. Saute shallot, garlic and turmeric. Add chicken broth and let boil. Stir in coconut milk and cornstarch water to thicken. Add sugar and salt to your taste.

Step 4

Pour sauce over the vegetables and serve hot.
