Indian Buttered Layered Flat Bread

This is Indian tradition style. The bread and curry is wonderful match.

Ingredients

  • Plain Flour 600g
  • Clarified Butter 90g
  • Salt 1 tsp
  • Water 340g
  • Oil some

Method

Step 1

Sift the flour on to a work surface and make a well in the middle. Add salt, sufficient water and 60g clarified butter and knead until the dough forms an elastic ball that is soft and pliable. Divide into 6 portions and shape each into a ball.

Step 2

Roll out each ball and brush generously with clarified butter. Put these in a bowl and cover with a damp cloth and let stand in a warm place for 6 to 10 hours.

Step 3

Brush work surface generously with oil. Roll the dough out into thin rounds. Pick up each piece and toss in from hand to hand to hand to stretch and loosen it. Gather the edges from both sides to give a pleated strip, then twist into a coil and out flat.

Step 4

In a flat iron griddle heat up some oil over low heat.

Step 5

Place the rolled out dough in the centre and fry over low heat until both sides are golden.
