Mackerel Croquettes

Ingredients

  • Mackerel Fillet 300g
  • Potato 350g
  • Bacon(chopped) 1 rasher
  • Shallot(chopped) 2Ts
  • Parsley(chooped) 2ts
  • Mixed Herbs 1/2 ts
  • Salt 3/4 ts
  • White Pepper Powder 1/4 ts
  • Flour 2 Ts
  • Egg(beat) 1 pc
  • Golden Breadcrumbs 1 cup

Method

Step 1

Steam mackerel fillet, discard bones and flake meat. Cooking potato in the skin, then peel and mash.

Step 2

Mackerel, potato, bacon, shallot, parsley, mixed herbs, salt, white pepper powder, flour and 1/2 egg mix well. To divide into 8 portions. Roll each portion into cylindrical shape, coat with egg and breadcrumbs.

Step 3

Heat half wok of oil to 160 C, deep fry fish croquettes in medium hot oil until golden in color. Drain and serve.
